These Raw Vegan Berry Cheesecake Slices are a fresh, creamy, and naturally sweet dessert made without baking. With a nutty date crust, a smooth cashew-based cheesecake filling, and a vibrant berry topping, this plant-based treat is both healthy and indulgent. It’s dairy-free, gluten-free, and refined sugar-free — perfect for summer gatherings or whenever you crave something sweet yet nourishing.

Ingredients
For the Crust:
1 ½ cups raw almonds or walnuts
1 cup soft Medjool dates, pitted
2 tbsp unsweetened shredded coconut (optional)
Pinch of salt
For the Cheesecake Filling:
2 cups raw cashews (soaked in water for 4–6 hours, then drained)
½ cup coconut cream
⅓ cup maple syrup or agave syrup
¼ cup melted coconut oil
2 tbsp fresh lemon juice
1 tsp vanilla extract
For the Berry Topping:
1 ½ cups mixed berries (strawberries, blueberries, raspberries)
2 tbsp maple syrup (optional)
1 tbsp chia seeds (optional, for thickening)

Preparation Method
1️⃣ Prepare the Crust
Add the nuts to a food processor and blend until they form a crumbly texture.
Add the dates and salt, then blend again until the mixture becomes sticky and holds together when pressed.
Press the mixture firmly into a lined square pan to form an even crust layer.
Place in the freezer while preparing the filling.

2️⃣ Make the Cheesecake Filling
Add the soaked and drained cashews to a high-speed blender.
Add coconut cream, maple syrup, melted coconut oil, lemon juice, and vanilla extract.
Blend until completely smooth and creamy.
Pour the mixture over the crust and smooth the top with a spatula.
Freeze for at least 4–6 hours, or until firm.

3️⃣ Prepare the Berry Topping
Blend half of the berries with maple syrup until smooth.
Stir in chia seeds if using, and let sit for 10–15 minutes to thicken.
Spread the berry mixture over the frozen cheesecake layer.
Top with remaining fresh berries for decoration.

4️⃣ Slice & Serve
Remove from the freezer and let sit at room temperature for 10–15 minutes before slicing.
Cut into squares or slices using a sharp knife.
Store leftovers in the freezer and thaw slightly before serving.
