Ingredients
For the Steak & Onions:
1 ribeye steak (1 lb)
1 yellow onion, sliced
2 garlic cloves, minced
2 tablespoons olive oil or butter
Salt and black pepper, to taste
1 teaspoon fresh thyme (optional)
For the Creamy Mashed Potatoes:
2 lbs potatoes, peeled and cubed
4 tablespoons butter
½ cup warm milk (or heavy cream for extra richness)
Salt, to taste
Instructions
1️⃣ Prepare the Potatoes
Place the peeled and cubed potatoes in a large pot. Cover with cold salted water.
Bring to a boil and cook for 15–20 minutes, or until fork-tender.
Drain well and return potatoes to the pot.
Add butter and warm milk. Mash until smooth and creamy. Season with salt to taste. Cover and keep warm.
2️⃣ Caramelize the Onions
Heat 1 tablespoon of olive oil or butter in a skillet over medium heat.
Add sliced onions and cook slowly for 10–15 minutes, stirring occasionally, until soft and golden brown.
Add minced garlic and cook for another 1–2 minutes until fragrant.
Remove from pan and set aside.
3️⃣ Cook the Ribeye Steak
Pat the steak dry with paper towels and season generously with salt and black pepper on both sides.
Heat the remaining oil or butter in the same skillet over medium-high heat.
Sear the steak for 3–5 minutes per side (depending on thickness and desired doneness).
