Ingredients:
1 cup cottage cheese
1 cup fresh blueberries
1 large egg
3 tablespoons honey or maple syrup (or a mix of both for extra flavor)
1 tablespoon lemon juice
1 teaspoon vanilla extract
¾ cup almond flour (or ½ cup regular all-purpose flour if not gluten-free)
1 teaspoon baking powder
¼ teaspoon salt
Optional: ¼ teaspoon cinnamon for extra depth of flavor
Directions:
Preheat your oven to 350°F (175°C) and grease a baking dish.
In a mixing bowl, combine the cottage cheese, egg, honey or maple syrup, lemon juice, and vanilla extract. Stir until well mixed.
In another bowl, whisk together the almond flour, baking powder, salt, and cinnamon (if using). Gradually add the dry ingredients to the wet mixture and stir until just combined.
Gently fold in the fresh blueberries, taking care not to crush them.
Pour the batter into the prepared baking dish and bake for 30–35 minutes, or until golden brown. A toothpick inserted into the center should come out clean.
