Sausage and Potato Bake

  • Ingredients:
  • 6 medium potatoes, peeled and washed
  • 4-6 sausages (chipolatas, Toulouse, or merguez)
  • 4 eggs
  • 1 garlic clove, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Herbs de Provence or paprika (optional)
  • Instructions:
  1. Preheat oven to 180°C. Prep a baking dish.
  2. Cut potatoes into quarters and sausages into pieces.
  3. Beat eggs with garlic, salt, pepper, and herbs.
  4. Brown sausages and potatoes in hot oil.
  5. Combine in a baking dish, pour egg mixture over, and bake for 25-30 minutes.
  6. Serve hot, garnished with herbs if desired
