Luxurious Cherry Mousse Cheesecake


This Luxurious Cherry Mousse Cheesecake is the ultimate creamy, dreamy dessert! Ingredients:
For the Crust:
2 cups graham cracker crumbs
1/2 cup melted butter
1/4 cup granulated sugar
For the Cream Cheese Layer:
2 cups cream cheese, softened
1 cup granulated sugar
1 teaspoon vanilla extract
1 cup heavy whipping cream (whipped to stiff peaks)

For the Cherry Mousse Layer:
1 1/2 cups cherry pie filling
1 cup heavy whipping cream (whipped)
1 tablespoon gelatin powder
3 tablespoons warm water

For Garnish:
Fresh cherries
Whipped cream

Instructions:
Step 1: Prepare the Crust
In a bowl, mix the graham cracker crumbs, melted butter, and sugar until well combined.
Press the mixture firmly into the bottom of a 9-inch springform pan.
Refrigerate for 30 minutes to set.

Step 2:
Make the Cream Cheese Layer
In a large bowl, beat the softened cream cheese and sugar until smooth and creamy.
Add vanilla extract and mix well.
Gently fold in the whipped cream until light and fluffy.
Spread the mixture evenly over the chilled crust.
Refrigerate for at least 1 hour to firm up.

Step 3:
Prepare the Cherry Mousse
Dissolve the gelatin in warm water and let it bloom for 5 minutes.
Slightly warm the cherry pie filling (do not boil), then stir in the dissolved gelatin.
Allow the mixture to cool to room temperature.
Fold in the whipped cream gently until fully combined and smooth.

Step 4:
Assemble
Pour the cherry mousse over the cream cheese layer and smooth the top.
Refrigerate for at least 4 hours, or overnight, until fully set.

Step 5:
Garnish & Serve
Carefully remove the cheesecake from the springform pan.
Decorate with whipped cream and fresh cherries.
