Ingredients:
1 bunch fresh celery stalks, washed and cut into sticks
1 cup white vinegar (or apple cider vinegar)
1 cup water
1 teaspoon salt
1 teaspoon sugar substitute (optional, for keto)
2 cloves garlic, sliced
½ teaspoon black peppercorns
½ teaspoon red pepper flakes (optional, for heat)
½ teaspoon mustard seeds (optional)
Directions:
Prepare the celery:

Make the brine:
In a saucepan, combine vinegar, water, salt, and sugar substitute. Heat over medium heat until the salt dissolves (no need to boil).
Fill the jar:
Place celery sticks into a clean glass jar. Add garlic, peppercorns, red pepper flakes, and mustard seeds.
Pour the brine:
Carefully pour the warm brine over the celery until fully covered.
Cool and refrigerate:
Let the jar cool to room temperature, then seal and refrigerate for at least 24 hours before eating for best flavor.
Serving Tips:
Enjoy straight from the jar as a crunchy snack.
Serve alongside grilled meat or sandwiches.
Chop and add to salads for extra tang.
Crispy, zesty, and super easy — this snack disappears fast once you try it!
