Slow Cooker Corned Beef and Cabbage


This Slow Cooker Corned Beef and Cabbage is a classic comfort dish made effortlessly in the crockpot. The corned beef becomes incredibly tender and flavorful as it slowly cooks with hearty vegetables and aromatic spices. It’s a satisfying, one-pot meal perfect for family dinners or special occasions.

Ingredients:
3–4 lbs corned beef brisket with spice packet
4 cups water (or enough to cover)
4 large carrots, peeled and cut into chunks
1½ lbs baby potatoes, halved
1 large onion, cut into wedges
1 medium head cabbage, cut into wedges
3 cloves garlic, minced
2 bay leaves

Instructions:
Prepare the Base:
Place the carrots, potatoes, and onion in the bottom of the slow cooker. Add the minced garlic.

Add the Corned Beef:
Rinse the corned beef brisket under cold water and pat dry. Place it on top of the vegetables, fat side up. Sprinkle the spice packet over the meat.

Add Liquid:
Pour in enough water to nearly cover the brisket. Add the bay leaves.

Cook Slowly:
Cover and cook on LOW for 8–9 hours or on HIGH for 4–5 hours, until the beef is tender and easily pierced with a fork.

Add the Cabbage:
About 1–2 hours before serving (or 45 minutes on HIGH), add the cabbage wedges to the slow cooker. Cover and continue cooking until the cabbage is tender.

Serve:
Remove the corned beef and let it rest for 10 minutes before slicing against the grain. Serve with the vegetables and a ladle of the cooking broth.
