Homemade Meatloaf with Mashed Potatoes

Ingredients:

For the meatloaf:

1 1/2 lbs ground beef

1 cup breadcrumbs

1/2 cup milk

1 egg

1 small onion, finely chopped

2 garlic cloves, minced

1/2 tsp salt

1/2 tsp black pepper

1/2 tsp dried parsley

1/4 cup ketchup (plus extra for topping)

For the mashed potatoes:

4 large potatoes, peeled and chopped

1/2 cup milk

2 tbsp butter

Salt to taste

Directions:

Preheat your oven to 375°F (190°C).

Mix the meatloaf: In a large bowl, combine ground beef, breadcrumbs, milk, egg, onion, garlic, salt, pepper, parsley, and ketchup. Mix until just combined—don’t overmix.

Shape and bake: Form the mixture into a loaf and place it in a baking dish or loaf pan. Spread a little extra ketchup on top. Bake for 50–60 minutes, or until the internal temp reaches 160°F (71°C).

Make the mashed potatoes: While the meatloaf bakes, boil potatoes in salted water until fork-tender (about 15–20 minutes). Drain, then mash with milk, butter, and salt until smooth.

Serve: Slice the meatloaf and serve with a big scoop of creamy mashed potatoes. Optional: drizzle a little extra ketchup or gravy over the top!
