Ingredients
1 cup cornmeal
1 cup all-purpose flour
1 tablespoon sugar (optional)
1 teaspoon salt
1 tablespoon baking powder
1 cup milk
2 large eggs
1/4 cup melted butter or vegetable oil
Instructions
Preheat the oven to 400°F (200°C). Place a cast-iron skillet (about 9 inches) in the oven while it heats up.
Mix the dry ingredients. In a large bowl, combine the cornmeal, flour, sugar (if using), salt, and baking powder. Stir well.
Mix the wet ingredients. In another bowl, whisk together the milk, eggs, and melted butter (or oil).
Combine. Pour the wet ingredients into the dry ingredients and stir just until combined. Do not overmix.
Prepare the skillet. Carefully remove the hot skillet from the oven and lightly grease it with butter or oil.
Bake. Pour the batter into the hot skillet and spread evenly. Bake for 20–25 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
Cool and serve. Let the cornbread cool slightly before slicing. Serve warm with butter, honey, or alongside your favorite savory dishes.
