Sausage and Potato Bake


This Sausage and Potato Bake is a comforting, hearty dish that’s perfect for a quick family dinner.

Ingredients:
6 medium potatoes, peeled and washed
4–6 sausages (chipolatas, Toulouse, or merguez)
4 eggs
1 garlic clove, minced
2 tablespoons olive oil
Salt and pepper to taste
Herbs de Provence or paprika (optional)

Instructions:
Preheat the Oven:
Preheat your oven to 180°C (350°F). Lightly grease a baking dish with a little olive oil or butter to prevent sticking.

Prepare the Ingredients:
Cut the potatoes into quarters (or smaller chunks if they are large). Slice the sausages into bite-sized pieces.

Prepare the Egg Mixture:
In a bowl, beat the eggs with the minced garlic, salt, pepper, and optional herbs or paprika until well combined.

Brown the Sausages and Potatoes:
Heat the olive oil in a large skillet over medium heat. Add the potatoes and cook for about 8–10 minutes, stirring occasionally, until they start to soften and turn lightly golden.
Add the sausage pieces and cook together for another 5–7 minutes until the sausages are browned.

Assemble the Bake:
Transfer the browned potatoes and sausages into the prepared baking dish. Spread them evenly.
Pour the egg mixture over the top, making sure everything is well coated.

Bake:
Place the dish in the preheated oven and bake for 25–30 minutes, or until the eggs are fully set and the top is golden.

Serve:
Remove from the oven and let it cool slightly before serving. Garnish with fresh herbs if desired and serve hot.
