Blueberry Cobbler with Vanilla Ice Cream


This warm and comforting Blueberry Cobbler is the perfect dessert for any occasion. Juicy, sweet blueberries bubble beneath a soft, golden-brown biscuit topping, creating a delicious contrast of textures.

Ingredients:
For the blueberry filling:
4 cups fresh or frozen blueberries
½ cup granulated sugar
1 tablespoon lemon juice
1 teaspoon lemon zest (optional)
1 tablespoon cornstarch

For the cobbler topping:
1 cup all-purpose flour
¼ cup granulated sugar
1 teaspoon baking powder
¼ teaspoon salt
½ cup unsalted butter, melted
¼ cup milk
1 teaspoon vanilla extract

For serving:
Vanilla ice cream
Powdered sugar (for dusting)

Instructions:
Preheat the oven to 180°C (350°F). Grease a baking dish lightly with butter.

Prepare the blueberry filling:
In a bowl, mix the blueberries, sugar, lemon juice, lemon zest, and cornstarch. Stir well until the berries are coated. Pour the mixture into the prepared baking dish.

Make the cobbler topping:
In another bowl, combine flour, sugar, baking powder, and salt. Add the melted butter, milk, and vanilla extract. Stir until a soft batter forms.

Assemble:
Spoon the batter evenly over the blueberry mixture. It does not need to completely cover the fruit.

Bake:
Place in the oven and bake for 35–40 minutes, or until the topping is golden brown and the blueberry filling is bubbling.

Serve:
Let the cobbler cool slightly. Dust with powdered sugar and serve warm with a scoop of vanilla ice cream on top.
