Mini Chicken Salad Croissant Sandwiches


These Mini Chicken Salad Croissant Sandwiches are light, creamy, and perfectly satisfying—ideal for brunch, tea parties, baby showers, lunchboxes, or quick family gatherings. Ingredients:
2 cups cooked chicken breast, finely chopped or shredded
½ cup mayonnaise
1 tablespoon Dijon mustard
1 tablespoon lemon juice
¼ cup celery, finely diced
2 tablespoons red onion, finely minced
Salt and black pepper to taste
1 tablespoon fresh parsley, chopped (optional)
8–10 mini croissants
Lettuce leaves (optional)

Instructions:
Prepare the Chicken Salad:
In a medium bowl, combine the shredded chicken, mayonnaise, Dijon mustard, and lemon juice. Mix until creamy and well blended.

Add Crunch & Flavor:
