Greek Feta & Cucumber Bite Skewers


Ingredients

1 large cucumber, sliced into thick rounds

6 oz (170g) feta cheese, cut into bite-sized cubes

½ cup cherry tomatoes, halved

2 tbsp extra virgin olive oil

1 tsp dried oregano

Freshly ground black pepper, to taste

Small wooden skewers or toothpicks

Optional garnish: fresh parsley or dill

Directions

Prepare the Ingredients:

Slice cucumber into thick, even rounds.

Cut feta into cubes similar in size to the cucumber pieces.

Halve the cherry tomatoes.

Assemble the Skewers:

On each small skewer or toothpick, layer one cucumber slice, one feta cube, and one cherry tomato half.

Repeat until all ingredients are used.

Season:

Arrange skewers on a serving platter.

Drizzle lightly with olive oil.

Sprinkle with oregano and freshly ground black pepper.

Serve:

Garnish with chopped parsley or dill if desired.

Serve chilled or at room temperature as a fresh appetizer.
