Ingredients (Serves 3–4)
For the Beef
14 oz (400 g) sirloin steak, thinly sliced against the grain
2 tablespoons cornstarch
1 tablespoon vegetable oil
For the Sauce
¼ cup soy sauce
3 tablespoons hoisin sauce
2 tablespoons brown sugar or honey
1 tablespoon oyster sauce
1 tablespoon rice vinegar
1 teaspoon sesame oil
½ teaspoon chili flakes (optional)
For the Noodles & Veggies
8 oz (225 g) egg noodles or rice noodles
3 cloves garlic, minced
1 tablespoon fresh ginger, grated
1 bell pepper, thinly sliced
1 cup shredded carrots
3 green onions, sliced
Sesame seeds, for garnish
Instructions
Prepare the Beef
Place the sliced beef in a bowl and toss with the cornstarch until evenly coated. This helps create that irresistible sticky texture.
Cook the Noodles
Cook the noodles according to package instructions. Drain and set aside.
Mix the Sauce
In a small bowl, whisk together soy sauce, hoisin sauce, brown sugar, oyster sauce, rice vinegar, sesame oil, and chili flakes. Set aside.
Sear the Beef
Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the beef in a single layer and cook for 2–3 minutes per side until browned. Remove from the pan and set aside.
Sauté Aromatics & Veggies
In the same pan, add garlic and ginger and sauté for 30 seconds until fragrant. Add bell pepper and carrots, cooking for 2–3 minutes until slightly tender.
Bring It All Together
Return the beef to the pan, add the cooked noodles, and pour in the sauce. Toss everything together and cook for 2–3 minutes, until the sauce thickens and coats everything beautifully.
Finish & Serve
Remove from heat, garnish with green onions and sesame seeds, and serve hot.
