Jamaican Jerk Pork Skewers with Mango Salsa


Get ready to spice up your summer gatherings with these mouthwatering Jamaican Jerk Pork Skewers topped with refreshing mango salsa!

Ingredients:

  • 1 lb pork tenderloin, cut into 1-inch cubes
  • 2 tbsp olive oil
  • 2 tbsp soy sauce
  • 2 tbsp lime juice
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1–2 tsp allspice
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper
  • Salt and pepper, to taste
  • Wooden skewers (soaked in water for 30 minutes)

For the Mango Salsa:

  • 1 cup fresh mango, diced
  • 1/2 red bell pepper, diced
  • 1/4 red onion, finely chopped
  • 1 small jalapeño, minced (optional)
  • 2 tbsp fresh cilantro, chopped
  • Juice of 1 lime
  • Salt, to taste

Directions:

  1. In a bowl, mix together olive oil, soy sauce, lime juice, garlic, ginger, allspice, paprika, cayenne, salt, and pepper. Add in the pork cubes, making sure they’re well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours if you want that flavor to really soak in!
  2. While the pork is marinating, whip up the mango salsa. In a medium bowl, combine the diced mango, red bell pepper, red onion, jalapeño (if using), cilantro, lime juice, and a sprinkle of salt. Give it a gentle stir and set aside to let those flavors mingle.
  3. Once the pork has finished marinating, thread the cubes onto the soaked wooden skewers.
  4. Preheat your grill or grill pan to medium-high heat. Grill the skewers for about 8–10 minutes, turning occasionally, until the pork is cooked through and beautifully charred.
  5. Serve the skewers on a platter and top with a generous scoop of that vibrant mango salsa. Pair it with rice or a refreshing side salad for a deliciously complete meal.
