Apple Cinnamon Breakfast Loaf


This Apple Cinnamon Breakfast Loaf is soft, lightly sweet, and filled with warm cinnamon flavor and tender apple pieces. It’s perfect for breakfast, brunch, or an afternoon snack with a cup of tea or coffee. Simple ingredients and easy steps make it a go-to homemade treat.

Ingredients
2 large eggs
1/2 cup granulated sugar
1/3 cup neutral oil (vegetable or canola)
1/4 cup milk
1 3/4 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon ground cinnamon
1 cup diced apple (peeled or unpeeled, your choice)
1/4 teaspoon salt (optional, but recommended)
1 teaspoon vanilla extract (optional)

Preparation Method
Preheat your oven to 180°C (350°F). Grease and lightly flour a loaf pan.

In a large bowl, whisk the eggs and sugar until light and slightly fluffy.

Add the oil and milk, then mix until well combined. Stir in the vanilla if using.

In a separate bowl, combine the flour, baking powder, cinnamon, and salt.

Gradually add the dry ingredients to the wet ingredients, mixing gently until just combined. Do not overmix.

Fold in the diced apple evenly throughout the batter.

Pour the batter into the prepared loaf pan and smooth the top.

Bake for 40–50 minutes, or until a toothpick inserted into the center comes out clean.

Let the loaf cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Serving Tip
Slice and serve warm or at room temperature.

Delicious on its own, or with a little butter or honey on top
