Ingredients
2 cups pineapple chunks (fresh or canned, well drained)
1½–2 cups whipped topping (Cool Whip or homemade whipped cream)
½ cup mini marshmallows
¼ cup chopped pecans or walnuts
¼ cup sweetened shredded coconut (optional, but very Hawaiian )
1 tablespoon pineapple juice or honey (optional, for extra sweetness)
Pinch of salt (balances the sweetness)
Method of Preparation
Prepare the pineapple
If using canned pineapple, drain it very well to avoid excess liquid. Cut into bite-sized chunks if needed.
Mix the base
In a large bowl, gently fold the whipped topping until light and fluffy.
Add the fillings
Fold in the pineapple chunks, mini marshmallows, nuts, and coconut (if using).
Add a splash of pineapple juice or honey if you like it sweeter.
Season lightly
Add a tiny pinch of salt to enhance all the flavors.
Chill
Cover and refrigerate for at least 1 hour to let the flavors meld and the texture set.
Serve
Spoon into a bowl and garnish with extra pineapple or chopped nuts on top. Serve cold.
