Ingredients
For the Pasta & Lobster:
300 g (10 oz) macaroni or elbow pasta
250 g (½ lb) cooked lobster meat, chopped
1 tbsp butter

For the Cheese Sauce:
3 tbsp butter
3 tbsp all-purpose flour
2½ cups milk (warm)
½ cup heavy cream
1½ cups shredded sharp cheddar cheese
½ cup shredded mozzarella or Gruyère cheese
¼ cup grated Parmesan cheese
2 cloves garlic, minced
Salt and black pepper, to taste
½ tsp paprika (optional)
¼ tsp nutmeg (optional)

Optional Topping:
½ cup breadcrumbs
1 tbsp melted butter
Extra Parmesan cheese
Method of Preparation
Cook the Pasta
Boil the pasta in salted water according to package instructions until al dente. Drain and set aside.

Prepare the Lobster
In a small pan, melt 1 tablespoon of butter over medium heat. Add the chopped lobster meat and gently warm for 1–2 minutes. Remove from heat and set aside.

Make the Cheese Sauce
In a saucepan, melt 3 tablespoons of butter over medium heat. Add the garlic and cook for 30 seconds until fragrant.

Stir in the flour and cook for 1 minute to form a roux. Gradually whisk in the warm milk and cream, stirring constantly until smooth and thickened.

Add the Cheese
Lower the heat and add cheddar, mozzarella (or Gruyère), and Parmesan cheese. Stir until fully melted and creamy. Season with salt, pepper, paprika, and nutmeg if using.

Combine Everything
Add the cooked pasta and lobster meat to the sauce. Gently stir until everything is well coated.

Optional Baking Step
Transfer to a baking dish. Mix breadcrumbs with melted butter and sprinkle on top with extra Parmesan.

Bake at 180°C (350°F) for 15–20 minutes until golden and bubbly.

Serve
Let rest for a few minutes, then serve warm and enjoy this rich, creamy seafood classic.
