Air Fryer Steak Bites with Chimichurri

Ingredients:

For the Steak Bites:

1 lb (450 g) sirloin or ribeye steak, cut into 1-inch cubes

2 tablespoons olive oil

2 garlic cloves, minced

1 teaspoon smoked paprika

1/2 teaspoon salt

1/2 teaspoon black pepper

For the Chimichurri:

1 cup fresh parsley

1/4 cup fresh cilantro

3 garlic cloves

2 tablespoons red wine vinegar

1/2 cup olive oil

1/2 teaspoon red pepper flakes

Salt and black pepper, to taste

Instructions:

Prepare the Steak Bites:
In a bowl, toss steak cubes with olive oil, garlic, smoked paprika, salt, and pepper. Let sit for 15 minutes.

Preheat Air Fryer:
Preheat your air fryer to 400°F (200°C) for 3 minutes.

Cook the Steak Bites:
Place steak bites in the air fryer basket in a single layer. Cook for 4 minutes, shake the basket, then cook another 4 minutes until desired doneness.

Make the Chimichurri:
In a food processor, combine parsley, cilantro, garlic, red wine vinegar, olive oil, red pepper flakes, salt, and pepper. Pulse until smooth but still slightly textured.

Serve:
Drizzle chimichurri over hot steak bites or serve on the side for dipping. Garnish with extra parsley if desired.
