Keto-Friendly Dark Chocolate Clusters with Almonds and Nuts


Ingredients:

8 oz dark chocolate (70% cocoa or higher)
1/2 cup almond slivers
1/4 cup chopped walnuts
1/4 cup chopped hazelnuts
1/4 cup unsweetened shredded coconut (optional)
1 teaspoon vanilla extract
1 pinch of sea salt
Directions:

Begin by melting the dark chocolate. Break the chocolate into smaller pieces and place it in a heatproof bowl over a pot of simmering water (double boiler method). Stir occasionally until the chocolate is fully melted and smooth.
While the chocolate melts, prepare the almonds and nuts. Coarsely chop the walnuts and hazelnuts if they aren’t already chopped, and set aside. Optionally, toast the nuts in a dry skillet for 2-3 minutes to enhance their flavor.
Once the chocolate has melted, remove the bowl from the heat and stir in the vanilla extract.
Add the almond slivers, walnuts, hazelnuts, and shredded coconut (if using) into the melted chocolate. Stir gently until everything is evenly coated.
Using a spoon, scoop small amounts of the chocolate-nut mixture and drop them onto a parchment-lined baking sheet. Feel free to make uneven, rustic clusters to add to the homemade charm.
Sprinkle a pinch of sea salt over the top of each cluster for an extra flavor boost.
Refrigerate the clusters for 30-45 minutes until they are fully set and firm.
Once set, remove the clusters from the refrigerator. Serve them immediately or store them in an airtight container at room temperature or in the fridge for longer shelf life.
