Ingredients:
1½ lb (700 g) sirloin steak or ribeye, cut into bite-size cubes
Salt and black pepper, to taste
1 tbsp olive oil
4 tbsp unsalted butter
4 cloves garlic, minced
1 tsp fresh thyme or rosemary (optional)
1 tbsp fresh parsley, chopped (for garnish)
Instructions:
Prepare the steak:
Pat the steak cubes dry with paper towels. Season generously with salt and black pepper.
Sear the steak:
Heat olive oil in a large skillet over high heat. Add the steak bites in a single layer (do not overcrowd). Sear for 2–3 minutes per side until browned and cooked to your desired doneness. Remove steak from the pan and set aside.
Make the garlic butter:
Reduce heat to medium. Add butter to the same skillet. Once melted, add minced garlic and herbs. Stir for about 30 seconds until fragrant (do not burn the garlic).
Combine:
Return the steak bites to the skillet and toss well in the garlic butter sauce for 1–2 minutes until fully coated.
