Sausage Gravy over Biscuits


Ingredients

For the sausage gravy

1 lb breakfast sausage

1/4 cup all-purpose flour

2–2½ cups whole milk

Salt, to taste

Black pepper, generously

For the biscuits

2 cups all-purpose flour

1 tbsp baking powder

1/2 tsp salt

1/2 cup cold butter

3/4 cup milk

Instructions

Preheat the oven to 425°F. In a bowl, mix flour, baking powder, and salt. Cut in the cold butter until the mixture looks crumbly. Stir in the milk just until combined. Gently pat the dough, cut into rounds, and bake for 12–15 minutes until golden.

While the biscuits bake, cook the sausage in a skillet over medium heat, breaking it into small pieces, until browned. Do not drain the fat. Sprinkle the flour over the sausage, stir well, and cook for about one minute. Slowly add the milk while stirring. Let the gravy simmer until thick and creamy. Season with salt and plenty of black pepper.

Split the warm biscuits and place them on a plate. Spoon the hot sausage gravy generously over the biscuits and serve immediately while hot.
