Creamy Lemon Squares


Ingredients

For the Crust:

4 tbsp butter, melted and cooled (plus more for greasing the pan)

1 ½ cups graham cracker crumbs

¼ cup sugar

For the Lemon Filling:

2 large egg yolks

1 can (14 oz) sweetened condensed milk

½ cup fresh lemon juice (about 3 lemons)

1️⃣ Prep the pan. Preheat your oven to 350°F (175°C) and lightly grease a square baking pan.

2️⃣ Make the crust. In a bowl, mix graham cracker crumbs, sugar, and melted butter until evenly combined. Press the mixture firmly into the bottom of the pan.

3️⃣ Bake the base. Pop the crust into the oven and bake until lightly golden and set.

4️⃣ Mix the lemon filling. In another bowl, whisk the egg yolks, sweetened condensed milk, and fresh lemon juice until smooth and creamy.

5️⃣ Pour and smooth. Pour the lemon filling over the warm crust and spread it evenly.

6️⃣ Bake again. Return to the oven and bake until the filling is just set and no longer jiggly.

7️⃣ Cool and chill. Let cool completely, then refrigerate until fully chilled. Slice into squares and enjoy that creamy, tangy perfection!
