Ingredients
2 pounds baby potatoes (red or yellow), washed and halved if large
1 cup bottled Italian dressing
1 cup baby carrots (or sliced carrots)
Optional: salt and black pepper, to taste
Optional garnish: chopped fresh parsley
Instructions
Place the potatoes and carrots into the slow cooker.
Pour the Italian dressing evenly over the vegetables.
Gently toss to coat everything well.
Cover and cook on LOW for 5–6 hours or HIGH for 3–4 hours, until the potatoes are fork-tender.
Taste and season with salt and black pepper if needed.
