
These crispy, golden roasted potatoes are bursting with flavor and incredibly easy to make. Ingredients:
2 pounds small potatoes (such as Yukon Gold or baby red potatoes)
3 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon dried thyme
Salt, to taste
Black pepper, to taste
Instructions:
Preheat your oven to 425°F (220°C).
Wash the potatoes well and cut them in half (or quarter larger ones) so they cook evenly.
Place the potatoes in a large bowl. Add the olive oil, minced garlic, dried thyme, salt, and black pepper.
Toss everything together until the potatoes are well coated.
Spread the potatoes in a single layer on a baking sheet, cut-side down for extra crispiness.
Roast for 30–40 minutes, flipping once halfway through, until the potatoes are golden brown and fork-tender.
Remove from the oven and serve hot.
