Ingredients
2–4 beef steaks (ribeye or sirloin work best)
Salt, to taste
Freshly ground black pepper, to taste
2 tbsp olive oil or butter
4 cloves garlic, peeled
Fresh rosemary sprigs
1–2 fresh chili slices (optional)
2 large eggs
Instructions
Prepare the Steak
Pat the steaks dry with paper towels.
Season generously on both sides with salt and black pepper.
Let them rest at room temperature for 15–20 minutes.
Sear the Steak
Heat a heavy skillet (preferably cast iron) over high heat.
Add olive oil or butter.
Place the steaks in the hot pan and sear for 2–3 minutes per side for medium-rare, or cook longer to your preferred doneness.
Add Flavor
Lower the heat slightly and add garlic cloves, rosemary sprigs, and chili slices.
Spoon the hot oil over the steaks for extra flavor.
Cook for another minute, then remove the steaks and let them rest.
Fry the Eggs
In the same pan, crack the eggs carefully.
Fry until the whites are set and the yolks remain runny.
Season lightly with salt and pepper.
Serve
