Bacon and Tomato Sandwiches

Ingredients

2 slices good-quality bread (white, sourdough, or whole wheat)

1 ripe tomato, sliced

1–2 tbsp mayonnaise (to taste)

Salt and freshly ground black pepper

Optional: a few drops of olive oil, fresh basil, or cracked chili flakes

Instructions

Lightly toast the bread if you like a little crunch, or leave it soft for a classic feel.

Spread mayonnaise evenly on one side of each slice.

Layer the tomato slices generously over the mayo.

Season well with salt and black pepper (this step makes all the difference).

Add any optional extras you enjoy, then close the sandwich, slice, and eat right away while the tomatoes are juicy and fresh.
