1 tbsp olive oil
For the Crab & Shrimp Stuffing
½ lb shrimp, peeled, deveined & finely chopped
½ lb lump crab meat
4 oz cream cheese, softened
2 tbsp mayonnaise
1 clove garlic, minced
1 tsp lemon juice
1 tsp Old Bay seasoning (or paprika)
1 tbsp fresh parsley, chopped
For the Honey Lemon Glaze
3 tbsp honey
2 tbsp fresh lemon juice
1 tsp lemon zest
1 tbsp melted butter
½ tsp chili flakes (optional)
Instructions
1️⃣ Prepare the stuffing:
In a bowl, mix cream cheese, mayonnaise, garlic, lemon juice, seasoning, and parsley until smooth. Gently fold in the chopped shrimp and crab meat. Set aside.
2️⃣ Prepare the salmon:
Preheat oven to 375°F (190°C).
Cut a deep pocket into the side of each salmon fillet. Season inside and out with salt and black pepper.
3️⃣ Stuff the salmon:
Carefully fill each salmon pocket with the crab and shrimp mixture, pressing gently so it stays inside.
4️⃣ Make the glaze:
In a small bowl, whisk together honey, lemon juice, lemon zest, melted butter, and chili flakes.
5️⃣ Bake:
Place salmon on a greased baking dish. Brush generously with the honey lemon glaze.
Bake uncovered for 18–22 minutes, or until salmon flakes easily and the top is beautifully glazed.
6️⃣ Optional broil:
For a golden finish, broil for 2–3 minutes at the end.
