Ingredients
4 medium green tomatoes, sliced ¼-inch thick
1 teaspoon salt
½ teaspoon black pepper
1 cup all-purpose flour
½ cup cornmeal (for extra crunch)
½ teaspoon paprika
½ teaspoon garlic powder
2 large eggs
¼ cup milk or buttermilk
Vegetable oil, for frying
Instructions
Wash the green tomatoes and slice them into ¼-inch thick rounds. Lightly sprinkle both sides with salt and pepper.
Set up a breading station:
In one bowl, add the flour mixed with paprika and garlic powder.
In a second bowl, whisk together the eggs and milk.
In a third bowl, combine the cornmeal with a pinch of salt.
Dredge each tomato slice in flour, shaking off excess. Dip into the egg mixture, then coat evenly with cornmeal.
Heat about ½ inch of vegetable oil in a skillet over medium heat until hot (about 350°F / 175°C).
Carefully place the coated tomato slices into the hot oil without overcrowding the pan.
Fry for 2–3 minutes per side, or until golden brown and crispy.
Remove and drain on paper towels. Sprinkle lightly with extra salt if desired.
Serve hot with ranch dressing, remoulade sauce, or a squeeze of lemon.
Tips
Make sure the oil is hot before frying to prevent soggy tomatoes.
For extra flavor, add cayenne pepper for a spicy kick.
