
Ingredients:
1 pound (about 450 g) mixed fresh berries (strawberries, blueberries, raspberries)
1/3 cup raspberry jam
24–30 ladyfinger cookies
8 oz (about 225 g) mascarpone cheese
1 cup heavy whipping cream
1/2 cup powdered sugar
1 teaspoon vanilla extract
Zest of 1 lemon
Optional: extra berries for topping
Instructions:
- Wash and gently dry the berries. In a bowl, mix the berries with the raspberry jam and lemon zest. Set aside.
- In another bowl, whip the heavy cream, powdered sugar, and vanilla until soft peaks form.
- Add the mascarpone to the whipped cream and gently fold until smooth and creamy.
- Dip each ladyfinger quickly into the berry mixture (just enough to moisten).
- Arrange a layer of soaked ladyfingers in the bottom of a square or rectangular dish.
- Spread half of the mascarpone cream over the ladyfingers. Add a layer of berries.
- Add another layer of soaked ladyfingers and then the remaining mascarpone cream.
- Top with extra berries and chill in the fridge for at least 2–3 hours before serving.
