Berry Tiramisu


Ingredients:
1 pound (about 450 g) mixed fresh berries (strawberries, blueberries, raspberries)
1/3 cup raspberry jam
24–30 ladyfinger cookies
8 oz (about 225 g) mascarpone cheese
1 cup heavy whipping cream
1/2 cup powdered sugar
1 teaspoon vanilla extract
Zest of 1 lemon
Optional: extra berries for topping

Instructions:

  1. Wash and gently dry the berries. In a bowl, mix the berries with the raspberry jam and lemon zest. Set aside.
  2. In another bowl, whip the heavy cream, powdered sugar, and vanilla until soft peaks form.
  3. Add the mascarpone to the whipped cream and gently fold until smooth and creamy.
  4. Dip each ladyfinger quickly into the berry mixture (just enough to moisten).
  5. Arrange a layer of soaked ladyfingers in the bottom of a square or rectangular dish.
  6. Spread half of the mascarpone cream over the ladyfingers. Add a layer of berries.
  7. Add another layer of soaked ladyfingers and then the remaining mascarpone cream.
  8. Top with extra berries and chill in the fridge for at least 2–3 hours before serving.
