Ingredients
Crust
2 cups graham cracker crumbs
2 tablespoons granulated sugar
4 tablespoons salted butter, melted
Cheesecake Filling
16 oz (450 g) cream cheese, softened
½ cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
½ cup sour cream or heavy cream
Strawberry Topping
2 cups fresh strawberries, chopped
¼ cup sugar
1 tablespoon lemon juice
1 tablespoon cornstarch + 2 tablespoons water
Preparation Method
- Prepare the Crust
Preheat the oven to 180°C (350°F).
In a bowl, mix graham cracker crumbs, sugar, and melted butter until evenly combined.
Press the mixture firmly into the bottom of a lined baking pan.
Bake for 8–10 minutes, then remove from the oven and let it cool slightly. - Make the Cheesecake Filling
In a large bowl, beat the cream cheese until smooth and creamy.
Add sugar and mix well.
Beat in the eggs one at a time, then add vanilla extract and sour cream.
Mix until smooth and lump-free.
Pour the filling evenly over the cooled crust. - Bake
Bake for 30–35 minutes, or until the center is just set.
Remove from the oven and allow it to cool completely. - Prepare the Strawberry Topping
In a saucepan, combine strawberries, sugar, and lemon juice.
Cook over medium heat until the strawberries soften.
Stir in the cornstarch mixture and cook until thickened.
Let the topping cool slightly. - Assemble & Chill
Spread the strawberry topping evenly over the cheesecake.
Refrigerate for at least 4 hours or overnight for best results. - Serve
