Ingredients:
2 cups cooked salmon (fresh or canned, flaked)
1 large egg
½ cup almond flour
¼ cup mayonnaise
1 tablespoon Dijon mustard
2 tablespoons fresh parsley, chopped
1 tablespoon lemon juice
½ teaspoon garlic powder
½ teaspoon onion powder
Salt and black pepper, to taste
2 tablespoons olive oil or butter (for frying)
Preparation Method:
In a large bowl, combine the flaked salmon, egg, almond flour, mayonnaise, Dijon mustard, parsley, lemon juice, garlic powder, onion powder, salt, and pepper. Mix well until the mixture holds together.
Shape the mixture into small patties using your hands.
Heat olive oil or butter in a non-stick skillet over medium heat.
Place the salmon cakes in the pan and cook for 3–4 minutes on each side, or until golden brown and crispy.
Remove from the pan and place on a paper towel to absorb excess oil.
Serve warm with keto tartar sauce, garlic aioli, or a side of fresh greens.
