Ingredients
200 g lentils (red or brown)
30 ml olive oil
2 tablespoons rice (ground into flour using a coffee grinder)
6 tablespoons water
3 tablespoons flaxseeds (ground)
20 g pumpkin seeds, chopped
1 apple, chopped or grated
Preparation Method
Soak the Lentils
Rinse the lentils well, then soak them in water for 6–8 hours or overnight. Drain and rinse again.
Blend the Base
Place the soaked lentils into a blender or food processor. Add olive oil and water. Blend until smooth and creamy.
Prepare the Dry Ingredients
Grind the rice and flaxseeds using a coffee grinder until fine.
Mix Everything Together
Transfer the lentil mixture to a bowl. Add the ground rice, ground flaxseeds, chopped pumpkin seeds, and grated or chopped apple. Mix well until fully combined.
Bake
Pour the batter into a small loaf pan lined with parchment paper.
