Description:
No-Bake Blueberry Delight, also known as Blueberry Lush, is a creamy, refreshing dessert layered with a buttery nutty crust, a smooth cream filling, and a sweet-tart blueberry topping. It’s the perfect make-ahead dessert for warm days, special gatherings, or anytime you want something indulgent without turning on the oven.

Ingredients
For the Crust:
2 cups crushed graham crackers or digestive biscuits
1/2 cup finely chopped almonds
1/2 cup melted butter or coconut oil
2 tablespoons olive oil

For the Cream Layer:
8 oz (225 g) cream cheese, softened
1 cup powdered sugar
1 teaspoon vanilla extract
1½ cups whipped cream or whipped topping

For the Blueberry Topping:
2 cups blueberry pie filling or sweetened blueberry compote
Fresh blueberries (optional, for garnish)
Preparation Method

Prepare the Crust:
In a bowl, combine the crushed graham crackers, chopped almonds, melted butter (or coconut oil), and olive oil. Mix until the texture resembles wet sand. Press the mixture firmly into the bottom of a serving dish or baking pan to form an even crust. Refrigerate for 20–30 minutes to set.

Make the Cream Layer:
In a separate bowl, beat the softened cream cheese until smooth and creamy. Add the powdered sugar and vanilla extract, and mix well. Gently fold in the whipped cream until light and fluffy.

Assemble the Layers:
Spread the cream mixture evenly over the chilled crust, smoothing the top with a spatula.

Add the Blueberry Layer:
Spoon the blueberry pie filling evenly over the cream layer. Spread gently to avoid mixing the layers.

Chill and Serve:
Refrigerate the dessert for at least 4 hours, or until fully set. For best results, chill overnight. Garnish with fresh blueberries before serving if desired.

Serve chilled and slice into squares. This dessert pairs beautifully with coffee or tea and stays fresh in the refrigerator for up to 3 days.
