Ingredients
For the Crust:
2 cups graham cracker crumbs
1/2 cup unsalted butter, melted
For the Cheesecake Filling:
16 oz (450 g) cream cheese, softened
3/4 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
2 ripe bananas, mashed
1/2 cup sour cream or heavy cream
For the Topping (optional but recommended):
1 1/2 cups whipped cream or whipped topping
1 banana, sliced (for garnish)
Crushed graham crackers or vanilla wafers (for garnish)
Preparation Method
Prepare the Crust:
Preheat the oven to 350°F (175°C). In a bowl, mix the graham cracker crumbs with the melted butter until evenly combined. Press the mixture firmly into the bottom of a lined or greased baking pan (about 9×13 inches). Bake for 8–10 minutes, then remove from the oven and let it cool slightly.
Make the Cheesecake Filling:
In a large bowl, beat the cream cheese and sugar until smooth and creamy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract, mashed bananas, and sour cream (or heavy cream) until fully combined and smooth.
Bake the Cheesecake:
Pour the cheesecake mixture over the prepared crust and spread it evenly. Bake for 30–35 minutes, or until the center is set but still slightly jiggly. Remove from the oven and allow it to cool completely at room temperature, then refrigerate for at least 3–4 hours (or overnight).
Add the Topping:
Once chilled, spread the whipped cream evenly over the cheesecake layer. Garnish with banana slices and crushed graham crackers or vanilla wafers if desired.
Serve:
Cut into bars and serve chilled. Enjoy your creamy, banana-flavored cheesecake bars!
