Cheesy Ground Beef Skillet Casserole


A Deliciously Melty and Hearty One-Pan Meal!

Ingredients:

1 lb ground beef (or ground turkey)

1 onion, diced

1 bell pepper, diced (optional: use a mix of red, yellow, or green peppers)

2 cloves garlic, minced

1 cup pasta (such as elbow macaroni or rotini)

1 can diced tomatoes (14.5 oz), drained

1 cup beef broth or water

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon paprika (optional for a little smokiness)

Salt and pepper to taste

1 ½ cups shredded cheddar cheese

1 cup shredded mozzarella cheese

Fresh parsley or herbs for garnish (optional)

Directions:
1️⃣ Cook the Pasta: Boil the pasta in salted water according to package instructions, then drain and set aside.
2️⃣ Cook the Beef: In a large skillet, heat a tablespoon of oil over medium heat. Add the ground beef, breaking it up as it cooks. Once browned, drain any excess fat.
3️⃣ Sauté the Vegetables: Add the diced onion, bell pepper, and minced garlic to the skillet. Cook for 3-5 minutes until softened.
4️⃣ Add the Tomatoes & Spices: Stir in the diced tomatoes, beef broth (or water), oregano, basil, paprika, salt, and pepper. Let the mixture simmer for 5-7 minutes, allowing the flavors to blend.
5️⃣ Combine the Pasta: Add the cooked pasta to the skillet, stirring to combine with the beef mixture.
6️⃣ Add Cheese: Sprinkle the shredded cheddar and mozzarella cheese evenly over the top. Cover the skillet with a lid and let it cook for 2-3 minutes, until the cheese is melted and bubbly.
7️⃣ Garnish & Serve: Sprinkle with fresh parsley or herbs if desired and serve hot.
