
Ingredients:
Crust:
1/2 cup feta cheese, crumbled
(60 g)
1/2 cup grated Parmesan
(50 g)
1 cup crushed savory crackers or breadcrumbs
(100 g)
3 tablespoons butter, melted
(45 g)
Filling:
8 oz cream cheese, softened
(225 g)
1/2 cup ricotta cheese
(120 g)
1/2 cup cooked mushrooms, chopped
(75 g)
1/4 cup chopped pistachios
(30 g)
1 teaspoon thyme or rosemary, chopped
(1 g)
Salt and pepper, to taste
Optional Garnish:
Extra pistachios or fresh herbs
Directions:
Preheat oven to 350°F / 175°C. Mix crust ingredients and press into the bottom of a springform pan.
Beat cream cheese and ricotta until smooth. Fold in mushrooms, pistachios, herbs, salt, and pepper.
Pour filling over crust and bake 25–30 minutes until set.
Cool, garnish, and serve at room temperature or slightly chilled.
