Ingredients
450 g (1 lb) elbow macaroni
4 tablespoons butter
4 tablespoons all-purpose flour
3 cups whole milk (warm)
2 cups shredded cheddar cheese
1 cup shredded mozzarella or Monterey Jack cheese
½ cup grated Parmesan cheese
1 teaspoon salt
½ teaspoon black pepper
½ teaspoon paprika (optional)
½ teaspoon garlic powder (optional)
½ cup breadcrumbs (optional, for topping)

Instructions
Cook the Pasta
Bring a large pot of salted water to a boil. Cook the macaroni according to package instructions until al dente. Drain and set aside.
Make the Cheese Sauce
In a large saucepan, melt the butter over medium heat. Add the flour and whisk continuously for about 1 minute until smooth and lightly golden.
Add the Milk
Gradually pour in the warm milk while whisking to avoid lumps. Cook for 3–4 minutes until the sauce thickens.
Add Cheese & Seasoning
Lower the heat and stir in cheddar, mozzarella, and Parmesan cheese until fully melted and creamy. Season with salt, pepper, paprika, and garlic powder.
Combine Pasta & Sauce
Add the cooked macaroni to the cheese sauce and mix well until evenly coated.
Bake
Preheat oven to 180°C (350°F). Transfer the mixture to a greased baking dish. Sprinkle breadcrumbs on top if desired.
Finish in the Oven
Bake for 20–25 minutes, or until the top is golden and bubbly. Let rest for 5 minutes before serving.

Serving Tip
