Ingredients
For the Honey-Glazed Chicken
2 boneless, skin-on chicken breasts (or skinless if preferred)
3 tablespoons honey
2 tablespoons soy sauce
1 tablespoon olive oil
2 cloves garlic, minced
1 teaspoon Dijon mustard
½ teaspoon paprika
Salt and black pepper, to taste

For the Bowl
1½ cups cooked long-grain rice
1 tablespoon fresh parsley or herbs of choice (chopped)
Curly leaf lettuce, washed and torn
1 large cucumber, sliced into thick rounds
Fresh cilantro, chopped (for garnish)

Instructions

  1. Prepare the Glaze
    In a small bowl, whisk together the honey, soy sauce, olive oil, garlic, Dijon mustard, paprika, salt, and pepper until smooth and glossy.
  2. Marinate the Chicken
    Coat the chicken breasts generously with the glaze. Let marinate for at least 20 minutes (or up to 2 hours for deeper flavor).
  3. Roast the Chicken
    Preheat the oven to 200°C (400°F).
    Place the chicken on a lined baking tray and roast for 25–30 minutes, basting once or twice, until the chicken is cooked through and beautifully caramelized.
  4. Prepare the Rice
    Fluff the cooked rice with a fork and stir in chopped herbs for extra freshness.
  5. Assemble the Glow Bowl
    Spoon the herbed rice into serving bowls. Add lettuce and cucumber slices on the side. Slice the honey-glazed chicken and place it on top.
  6. Finish & Serve
    Drizzle with extra glaze from the pan and sprinkle generously with fresh cilantro. Serve warm and enjoy.
