Ingredients
For the Honey-Glazed Chicken
2 boneless, skin-on chicken breasts (or skinless if preferred)
3 tablespoons honey
2 tablespoons soy sauce
1 tablespoon olive oil
2 cloves garlic, minced
1 teaspoon Dijon mustard
½ teaspoon paprika
Salt and black pepper, to taste
For the Bowl
1½ cups cooked long-grain rice
1 tablespoon fresh parsley or herbs of choice (chopped)
Curly leaf lettuce, washed and torn
1 large cucumber, sliced into thick rounds
Fresh cilantro, chopped (for garnish)
Instructions
- Prepare the Glaze
In a small bowl, whisk together the honey, soy sauce, olive oil, garlic, Dijon mustard, paprika, salt, and pepper until smooth and glossy. - Marinate the Chicken
Coat the chicken breasts generously with the glaze. Let marinate for at least 20 minutes (or up to 2 hours for deeper flavor). - Roast the Chicken
Preheat the oven to 200°C (400°F).
Place the chicken on a lined baking tray and roast for 25–30 minutes, basting once or twice, until the chicken is cooked through and beautifully caramelized. - Prepare the Rice
