Ingredients:
2 boneless, skinless chicken breasts
½ cup fresh cranberries
4 oz Brie cheese, rind removed and cubed
Salt and black pepper, to taste
1 tablespoon olive oil or butter
1 teaspoon fresh thyme or rosemary (optional)
Toothpicks or kitchen twine
Instructions :
Preheat your oven to 375°F (190°C).
Using a sharp knife, carefully cut a pocket lengthwise into each chicken breast, being careful not to cut all the way through.
Season the chicken breasts inside and out with salt and black pepper.
Stuff each chicken breast with cubes of Brie cheese and fresh cranberries. Add a pinch of thyme or rosemary if desired.
Secure the opening with toothpicks or tie with kitchen twine to keep the filling inside.
Heat olive oil or butter in an oven-safe skillet over medium heat. Sear the stuffed chicken breasts for 3–4 minutes per side, until golden brown.
Transfer the skillet to the oven and bake for 15–20 minutes, or until the chicken is fully cooked and the cheese is melted and creamy.
Remove from the oven, let rest for a few minutes, then remove toothpicks or twine before serving.
