Ingredients
For the Beet Pasta Dough
200 g all-purpose flour
100 g cooked beetroot, finely puréed
1 tablespoon olive oil
1/4 teaspoon salt
For the Filling (suggested)
200 g ricotta cheese
50 g grated Parmesan cheese
Salt and black pepper, to taste
A pinch of nutmeg (optional)
For Serving
Butter or olive oil
Fresh sage or basil leaves
Extra grated Parmesan cheese

Instructions
Prepare the Pasta Dough
On a clean work surface, place the flour in a mound and make a well in the center. Add the beetroot purée, olive oil, and salt into the well.

Gradually mix the flour into the wet ingredients using a fork, then knead by hand for about 8–10 minutes until smooth and elastic.

Wrap the dough in plastic wrap and let it rest for 30 minutes at room temperature.

Prepare the Filling
In a bowl, combine ricotta cheese, Parmesan, salt, pepper, and nutmeg. Mix well until smooth. Set aside.

Roll the Dough
Divide the dough into two portions. Roll each portion thinly using a rolling pin or pasta machine until almost transparent.

Shape the Heart Ravioli
Place small teaspoons of filling spaced evenly on one sheet of pasta. Cover with the second sheet. Gently press around the filling to remove air. Cut into heart shapes using a heart-shaped cutter.

Cook the Ravioli
Bring a large pot of salted water to a gentle boil. Cook the ravioli for 2–3 minutes, or until they float to the surface.

Serve
Gently toss the cooked ravioli with melted butter or olive oil and fresh herbs. Serve hot, topped with grated Parmesan cheese.

Serving Tip
Pair this dish with a light cream sauce, lemon butter, or a drizzle of balsamic glaze for an extra gourmet touch.
