1 lb (450 g) lean ground turkey or extra-lean ground beef
1 small onion, finely chopped

1 can (14–15 oz) crushed tomatoes
1 can (14–15 oz) diced tomatoes
4 cups low-sodium chicken or beef broth
1 tablespoon tomato paste
1 teaspoon dried basil
1 teaspoon dried oregano
½ teaspoon dried thyme (optional)
Salt and black pepper, to taste
6–8 lasagna noodles, broken into bite-sized pieces
1 cup part-skim ricotta cheese
½ cup reduced-fat mozzarella cheese, shredded
2 tablespoons grated Parmesan cheese
Fresh basil or parsley, chopped (for garnish)
Instructions
Heat the olive oil in a large pot over medium heat. Add the chopped onion and cook for 3–4 minutes until softened.
Add the garlic and cook for another 30 seconds until fragrant.
Add the ground turkey or beef and cook, breaking it up with a spoon, until browned and fully cooked. Drain excess fat if needed.
Stir in the crushed tomatoes, diced tomatoes, tomato paste, broth, basil, oregano, thyme, salt, and pepper. Mix well.
Bring the soup to a gentle boil, then reduce heat and simmer for 10 minutes to let the flavors develop.
Add the broken lasagna noodles and cook for 8–10 minutes, or until the pasta is tender. Stir occasionally to prevent sticking.
Taste and adjust seasoning if needed.
Serve hot, topped with a spoonful of ricotta, a sprinkle of mozzarella and Parmesan, and fresh herbs.
