
This Keto Pickle Snack is a fun, savory, and satisfying low-carb treat that perfectly fits a ketogenic lifestyle. Crunchy pickles are hollowed out and filled with seasoned ground beef, sautéed onions and peppers, then topped with melted cheese for a bold, comforting bite. It’s ideal as a quick snack, appetizer, or even a light keto meal.
Ingredients
2 large dill pickles (whole, firm, sugar-free)
200 g ground beef (80/20 preferred for keto)
2 tablespoons chopped onion
2 tablespoons chopped green bell pepper
½ teaspoon garlic powder
½ teaspoon paprika
Salt and black pepper to taste
½ cup shredded cheese (cheddar, mozzarella, or a keto cheese blend)
1 teaspoon olive oil or butter
Instructions
Prepare the pickles
Slice each pickle lengthwise and gently scoop out the seeds using a spoon to create space for the filling. Pat dry with paper towels.
Cook the filling
Heat olive oil or butter in a skillet over medium heat.
Add ground beef and cook until browned.
Stir in chopped onion and bell pepper, and cook for 2–3 minutes until softened.
Season
Add garlic powder, paprika, salt, and black pepper. Mix well and remove from heat.
Stuff the pickles
Fill each pickle half generously with the beef mixture.
Add cheese
Sprinkle shredded cheese evenly over the stuffed pickles.
Melt the cheese
Place under a broiler or in an oven at 180°C (350°F) for 5–7 minutes, until the cheese is melted and bubbly.
Serve
Let cool slightly and enjoy warm.
