Ingredients:
8 oz pasta (linguine, fettuccine, or spaghetti work wonderfully)
1 lb large shrimp, peeled and deveined
4 tablespoons unsalted butter
4 cloves garlic, minced (or more if you’re a garlic lover!)
1/4 cup chopped fresh parsley (plus extra for garnish)
1/4 cup grated Parmesan cheese (plus extra for serving)
Salt and freshly ground black pepper to taste
Optional:
A squeeze of fresh lemon juice for brightness
Instructions:
Cook the Pasta:
Bring a large pot of salted water to a boil. Add your pasta and cook according to package directions until al dente (tender but still firm to the bite). Before draining, reserve about 1/2 cup of the starchy pasta water. Drain the pasta well.
Sauté the Shrimp:
While the pasta is cooking, melt the butter in a large skillet or pot over medium heat. Add the minced garlic and cook for about 1 minute until fragrant, being careful not to burn it.
Add the Shrimp:
Add the peeled and deveined shrimp to the skillet. Season with salt and pepper. Cook for 2-3 minutes per side, or until the shrimp are pink and opaque. Don’t overcook them, or they’ll become tough!
Combine Everything:Add the drained pasta to the skillet with the shrimp and garlic butter. Toss gently to coat.
