Instructions (Method of Preparation):
Preheat your oven to 425°F (220°C).
Lightly grease a large sheet pan with oil or cooking spray.
Season the thinly sliced pork chops on both sides with your favorite seasonings (such as salt, pepper, garlic powder, or paprika).
Place mayonnaise in a separate bowl.
Dip each pork chop lightly into the mayonnaise, coating both sides with a very thin layer.
In another bowl, mix 1 cup Italian-style panko breadcrumbs with ½ cup grated Parmesan cheese.
Coat each mayonnaise-covered pork chop in the breadcrumb mixture, pressing gently on both sides to ensure an even coating.
Arrange the pork chops on the prepared sheet pan. Lightly spray the tops with oil.
Bake for 14 minutes, then switch to broil and cook for an additional 2–3 minutes until golden brown and crispy.
