Keto Philly Cheesesteak Sliders (On Keto Buns!)

OMG… these were next-level delicious Philly Cheesesteak Sliders on keto buns are officially on repeat in our house. This recipe is adapted from one I found online, with a few tweaks to keep it keto-friendly and ultra-flavorful.

Keto Philly Cheesesteak Sliders

Prep Time: 20 minutes
Cook Time: 25 minutes
Servings: 12 sliders

Ingredients
Cheesesteak Filling

1 lb sirloin steak, thinly sliced
(I used deli roast beef and had it shaved—worked perfectly!)

2 tbsp bacon grease

4 cloves garlic, minced

½ medium yellow onion, sliced

2 oz fresh mushrooms, minced (optional)

½ large green bell pepper, sliced

Salt & pepper, to taste

½ tsp smoked paprika

1 tbsp Worcestershire sauce

Sliders

12 keto dinner rolls

½ cup mayonnaise

6 slices provolone cheese

¾ cup Velveeta (lower carb than traditional cheese whiz)

Garlic Butter Topping

3 tbsp butter, melted

1 tsp garlic powder

1 tbsp parsley, fresh or dried

Instructions

Prep the Veggies
Mince the garlic and mushrooms. Slice the onion and bell pepper. Set aside.

Cook the Vegetables
Heat bacon grease in a large skillet over medium heat.
Sauté garlic, onion, mushrooms, and bell pepper for about 10 minutes, or until softened. Remove from skillet and set aside.

Cook the Meat
Add the shaved steak to the same skillet. Season with salt, pepper, smoked paprika, and Worcestershire sauce.
Cook until the meat is almost done.

Combine
Add the cooked vegetables back into the skillet with the meat. Stir and simmer until everything is fully cooked and well combined.

Prepare the Rolls
Slice the keto rolls in half as a whole slab (keeping tops and bottoms together).
Place the bottom layer into a foil-lined baking dish lightly sprayed with oil.

Assemble the Sliders

Spread mayo evenly over the bottom rolls

Add a layer of provolone cheese

Pile on the meat and veggie mixture (don’t skimp!)

Spoon a small dollop of melted Velveeta onto each slider

Place the top layer of rolls on top

Add Garlic Butter
Mix melted butter, garlic powder, and parsley.
Brush generously over the tops of the rolls.

Bake
Cover loosely with foil and bake at 350°F (175°C) for 10–15 minutes, until cheese is melted.
Remove foil and bake an additional 5–10 minutes, until tops are golden.

Serve & Enjoy
Serve warm and watch them disappear!
