Chocolate Chip Cookie Ice Cream Sandwiches

Ingredients:

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups semisweet chocolate chips
  • 1.5 quarts vanilla ice cream

Directions:

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, cream together the butter, granulated sugar, and brown sugar until smooth.
  3. Beat in the eggs one at a time, then stir in the vanilla.
  4. Combine the flour, baking soda, and salt; stir into the cookie dough.
  5. Mix in the chocolate chips.
  6. Drop dough by rounded tablespoonfuls onto ungreased cookie sheets.
  7. Bake for 10 to 12 minutes in the preheated oven.
  8. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.
  9. Once cookies are completely cooled, scoop a generous amount of vanilla ice cream onto the flat side of a cookie.
  10. Top with another cookie, flat side down, and gently press together.
  11. Repeat with remaining cookies and ice cream.
  12. Individually wrap each sandwich in plastic wrap and freeze until firm, at least 2 hours.
