Ingredients
1 fully cooked bone-in ham (4–5 kg / 8–10 lb)
1 cup pineapple juice
1 cup brown sugar
½ cup honey or maple syrup
2 tablespoons Dijon mustard
1 teaspoon ground cinnamon
½ teaspoon ground cloves (optional)
Pineapple slices (fresh or canned)
Maraschino cherries (optional, for decoration)
Whole cloves (optional, for studding the ham)
Preparation Method
Preheat the oven
Preheat your oven to 165°C (325°F).
Prepare the ham
Place the ham in a roasting pan, cut side down. Score the surface in a diamond pattern using a sharp knife. Insert whole cloves into the intersections if desired.
Make the pineapple glaze
In a saucepan over medium heat, combine pineapple juice, brown sugar, honey, Dijon mustard, cinnamon, and cloves. Stir well and simmer for 5–7 minutes until slightly thickened.
Glaze the ham
Brush a generous amount of the glaze over the ham. Arrange pineapple slices on top and secure with toothpicks if needed. Place cherries in the center of each slice if using.
Bake
Cover loosely with foil and bake for 1½–2 hours, basting every 20–30 minutes with more glaze.
Caramelize
Remove the foil during the last 20 minutes to allow the glaze to caramelize and turn golden.
Rest and serve
Remove from the oven and let the ham rest for 10–15 minutes before slicing.
