Slow Cooker Pepper Steak

Slow Cooker Pepper Steak is a comforting and flavorful dish made with tender strips of beef slowly cooked in a savory soy-based sauce with sweet bell peppers and onions. The slow cooking process allows the beef to become incredibly soft while soaking up all the rich, umami flavors. It’s an easy, hands-off meal that’s perfect for busy days and tastes amazing served over rice or noodles.

Ingredients:
700 g (1½ lb) beef sirloin or flank steak, sliced into thin strips
2 tbsp cornstarch
2 tbsp vegetable oil
1 cup beef broth
½ cup soy sauce (low sodium preferred)
1 tbsp Worcestershire sauce
1 tbsp brown sugar
1 tsp ground ginger
2 cloves garlic, minced
1 large onion, sliced
2 bell peppers (red and green), sliced
½ tsp black pepper
Salt to taste

Instructions:

Prepare the beef:
Place the sliced beef in a bowl, sprinkle with cornstarch, and toss until evenly coated

Sear the beef (optional but recommended):
Heat vegetable oil in a skillet over medium-high heat. Quickly brown the beef strips for 1–2 minutes to lock in flavor.

Make the sauce:
In a bowl, whisk together beef broth, soy sauce, Worcestershire sauce, brown sugar, ginger, garlic, black pepper, and a pinch of salt.

Assemble in the slow cooker:
Add the beef, sliced onion, and bell peppers to the slow cooker. Pour the sauce over everything and gently stir.

Slow cook:
Cover and cook on LOW for 6–7 hours or on HIGH for 3–4 hours, until the beef is tender and the sauce thickens.

Serve:
Taste and adjust seasoning if needed. Serve hot over steamed rice or noodles.

Serving Tip:
Garnish with sesame seeds or chopped green onions for extra flavor and a beautiful presentation.
