
Ingredients:
- 12 Jalapeño Peppers
- 1 box (15 oz) Cornbread Mix
- 1 1/2 cups Shredded Cheddar Cheese
- 1 cup Canned Corn
Directions:
- Preheat the oven to 350 degrees F (180 degrees C).
- Slice each Jalapeño Pepper down the center and remove all the seeds and veins. Set aside.
- In a medium bowl, prepare the Cornbread Mix according to the box instructions. Then, mix in the Canned Corn and Shredded Cheddar Cheese.
- Fill each pepper with the batter, making sure not to overfill.
- Sprinkle the remaining cheese on top of the peppers.
- Place the peppers on a baking sheet and bake for 15-20 minutes until the cornbread is firm and cooked through. They will be puffed and cheesy!
