Jalapeño Cornbread Poppers


Ingredients:

  1. 12 Jalapeño Peppers
  2. 1 box (15 oz) Cornbread Mix
  3. 1 1/2 cups Shredded Cheddar Cheese
  4. 1 cup Canned Corn

Directions:

  1. Preheat the oven to 350 degrees F (180 degrees C).
  2. Slice each Jalapeño Pepper down the center and remove all the seeds and veins. Set aside.
  3. In a medium bowl, prepare the Cornbread Mix according to the box instructions. Then, mix in the Canned Corn and Shredded Cheddar Cheese.
  4. Fill each pepper with the batter, making sure not to overfill.
  5. Sprinkle the remaining cheese on top of the peppers.
  6. Place the peppers on a baking sheet and bake for 15-20 minutes until the cornbread is firm and cooked through. They will be puffed and cheesy!
  7. Let them cool down a bit and enjoy your delicious Jalapeño Cornbread Poppers!
